Baking in a lunchtime – jammy muffins
You know when you have such a busy day that you don’t know how you are going to fit another thing in? And then you do. It seems that I’m often at my most productive when under pressure. Working from home means I can snatch time during my lunch break to do a bit of cooking which relieves the stress rather than adds to it.
I’m on the baking list for our school fund-raising commitee and needed something quick for people to buy at parent’s evening. I reached for the jar of Nutella but it was missing so the strawberry jam jar came out instead. Ten minutes to make, 30 to cook and they were still slightly warm when I ran into school to give them to Ashlee who does the hard part – manning the stall. These jammy muffins smell so good and are like a cream tea in muffin form. They are from my well thumbed River Cottage everyday by Hugh Fearnley-Whittingstall. You can see the lemon-curd and Nutella muffins recipe here, just substitute 150g of strawberry jam, well-stirred, for the lemon curd and add it in blobs. Stir lightly with a spatula to marble into the mixture. I’m going to try a peanut butter and banana version next. Eat on the same day but I’m sure you don’t need me to tell you that.

Sally you are such a bad influence. Have just ended up buying two new cookbooks from Amazon…. the one you recommend above and a Nigel Slater…. now just need to cram in lunchtime cooking!
That’s a good influence in my book! Try the tupperware chorizo from Everyday or the homemade digestive biscuits….and enjoy.

Sally, looking at your pics, you are making me seriously think over buying a DSLR camera.
I can’t believe you don’t have one already with the quality of your lovely pics.
Unfortunately the quality is not the one I whould like to obtain, it’s just hard time shooting and it takes us more than an hour time for preparation before shooting – mirrors, light reflectors, etc.
For me the problem with buying a DSLR camera is that when one has it, one starts to think about lens, lights, etc and the price becomes really twisted.
What model is your Nikon?
I chose the D5000 in the end as I am such a complete beginner. It’s nice and compact and I’m enjoying using it. I did a lot of comparison between Canon and Nikon and there are pros and cons for each – both good makes. No wonder your pictures are so lovely if you spend that long setting up the shot – if you bought a DSLR you may spend the same amount of time though.
